Whipped Ricotta with Sliced Tomato on Cape Seed Toast

Ingredients
2 slices Cape Seed Loaf
1/3 cup low-fat ricotta
1 tbsp low-fat milk
1 tbsp feta
½ tomato, sliced or ½ cup cherry tomatoes, chopped
Herbs to season, eg dukkah, pepper, basil
Method

Step 1
In a small bowl, whip together ricotta, feta and milk using the back of a spoon

Step 2
Spread evenly onto the toasted slides of Cape Seed Loaf and top with slices of tomato.

Season with dukkah, cracked pepper or herbs such as basil, if you like
