Fried Vegetarian Rice Recipe

Ingredients
2 cups cooked brown rice
2 x bok choy
4 eggs
1 medium carrot
2 cups broccoli, cut into florets
2 stalks of spring onions
½ tbsp extra-virgin olive oil
½ red chilli or ½ tsp chilli flakes
1 ½ tbsp salt-reduced oyster sauce
1 tbsp salt-reduced soy sauce
½ tbsp ginger, diced
½ tbsp extra-virgin olive oil
Coriander and lemon juice to serve

Step 1
Cook brown rice according to instructions and set aside to cool. Preferably use cooked and cooled rice in this dish

Step 2
In a small bowl, whisk together eggs and cook omelette-style in a small pan with heated butter. Set aside and cut into small bite sized pieces

In a large pan, heat oil and sauté onions, ginger, carrot and broccoli on high heat for 2-3 minutes. Add rice and egg to the pan and mix to combine

Mix together oyster sauce, soy sauce and chilli flakes in a small bowl and then pour over the rice mixture

Step 5
Keeping the pan over high heat, add in bok choy. Turn ingredients over gently until bok choy has wilted and vegetables are tender

Serve with fresh coriander and a squeeze of lemon juice
