French toast without egg? You won’t miss them with this easy and delicious vegan French toast recipe. It’s crispy on the outside, soft on the inside and makes the perfect breakfast – vegan or not.

The best French toast recipes use top quality bread as a base for the toast and ours is no exception! Using our delicious Sourdough Vienna loaf, we also add vanilla and cinnamon to the mix, making this a tasty alternative to regular French toast. Choose your own adventure with your favourite milk substitute, drizzle with maple syrup and blueberries and you’ve got a delicious breakfast or brunch to rival the restaurants!

6 slices of Bakers Delight Sourdough Vienna
3 tbsp maple syrup
150g blueberries
2 tbsp chickpea flour
2 tbsp almond meal
2 tsp cinnamon
200ml oat milk or rice milk
1 tbsp golden caster sugar
1 tsp vanilla extract
Grapeseed oil, for frying
Icing sugar, for dusting

Method

    1. Step 1

      Gently heat the maple syrup and blueberries in a saucepan until the berries start to release their juices. Set them to one side in the pan

    2. Step 2

      Whisk the chickpea flour, almond meal, cinnamon, milk and vanilla together in a bowl

    3. Step 3

      Heat a little oil in a frying pan

    4. Step 4

      Dip a slice of bread into the milk mixture, shake off any excess and fry the bread on both sides until it browns and crisps at the edges. Keep the slices warm in a low oven as you cook the rest

      Serve with the blueberry mixture spooned over and dust with icing sugar

How do you know vegan French toast is cooked? 

You’ll know when your vegan French toast is cooked when it’s brown and crispy on the outside, just like with regular French toast. The centre should also be set and shouldn’t be runny when you cut it. 

How do you make vegan French toast crunchy?

The secret to perfectly crunchy vegan French toast is to add some sort of flour, like corn flour or chickpea flour, as this helps it crisp up in the pan. It won’t affect the inside of the bread though, which will remain soft and creamy.

Why does my vegan French toast taste like nothing?

If the bread you’ve used as a base for your vegan French toast is tasteless, it won’t do your breakfast any favours. Try using a sourdough loaf, and make sure that the bread is a little stale so it can soak up the flavour of the milk mixture.
