120g dried wholemeal pasta
1 brown onion, diced
700g tomato passata (with basil if preferred or, a handful of basil leaves)
½ tsp chilli flakes
1 garlic clove, crushed
½ tbsp extra-virgin olive oil
300g tinned tuna, drained
½ cup kalamata olives
½ sundried tomatoes
1 cup baby spinach, plus extra to serve

Method

    1. Step 1

      Cook pasta according to packet instructions, do not discard pasta water

    2. Step 2

      Heat oil in a large pan and add garlic. Fry for 2 minutes until fragrant. Add tomato passata, basil and cracked pepper. Reduce to low heat and let simmer for 2-3 minutes

    3. Step 3

      Add in sundried tomatoes, tuna, and olives. Using a spatula, gently break up tuna chunks and stir evenly in the sauce mixture

    4. Step 4

      Add pasta to the sauce and ½ cup of pasta water. Allow simmering for a few minutes to reduce the liquid then stir in ½ amount of baby spinach and stir a few times until all combined

    5. Step 5

      Divide evenly between bowls and add the remaining baby spinach, or rocket if you like, to each dish. Serve with parmesan cheese
