Introduction
When it comes to cold weather this is how we roll! This healthy, sweet potato and lime soup in our Sourdough Rolls will warm you up in no time.

Method
Heat the coconut oil in large saucepan and add the diced onion. Cook until softened and translucent, then add the diced celery and garlic and cook for a further 2-3 minutes
Add sweet potatoes to the pan, together with the broth or stock and lime zest, and bring to a simmer
Cover and cook for 15-18 minutes until sweet potatoes are tender
Cut the tops off the sourdough rolls and remove the roll filling. Place the rolls in the oven for 5-7 mins at 180°C or until slightly crispy
Remove from heat and stir in lime juice
Transfer soup to a blender and blend until completely smooth
Ladle the soup into the rolls, season with salt and pepper to taste and serve with a swirl of coconut milk and a sprinkle of chives on top
