Smashed Chickpea Sandwich

Ingredients
4 slices Bakers Delight Wholegrain LowFOD™ Loaf
1 can chickpeas drained & roughly mashed
1/2 lemon, squeezed for juice (approx 1 tbsp)
1/4 teaspoon ground cumin
1/4 teaspoon smoked paprika
1 heaped tablespoon mayo or to taste
1 teaspoon grainy mustard
1 bunch of radish sliced
Small sprinkle of radish sprouts, or amaranth sprouts to taste
Small handful of rocket leaves

Step 1
Drain the chickpeas, then place in a bowl

Coarsely mash chickpeas them with a fork or potato masher

Step 3
Add the lemon juice, cumin, smoked paprika, salt & pepper, mayo, and grainy mustard

Stir mixture and chickpeas together gently

Toast your bread slices and add the chickpea salad, topped with radishes, sprouts, and rocket
