8 slices Bakers Delight Hi-Fibre Lo-GI White Block Loaf
250g potatoes
1 tbs oil
1 tsp cumin seeds
1 tsp black mustard seeds
1/3 cup frozen peas
1 tsp garam masala
1/2 tsp turmeric powder
1 tsp salt
1 tbsp sliced fresh green chilli (option)

Method

    1. Step 1

      Peel then cut potatoes in half. Place in a pot of cold water, bring to boil or steam then cook until soft

    2. Step 2

      Mash the potatoes roughly with a fork, leaving some chunks

    3. Step 3

      In a large pan over medium heat, heat the oil then add the cumin seeds & mustard seeds. Stir the spices for about 30 seconds or until fragrant, Add the peas and continue to stir a further minute. Add remaining spices & salt. Cook until peas have softened

    4. Step 4

      Add potato and gently stir to coat in spices for about 1 minute. Remove from the stove to let it cool completely before using

    5. Step 5

      To make the jaffles: place the 2 base slices of bread in your jaffle maker. Spoon a large tablespoon of the samosa mixture into each half of the jaffles, place the top slices on top and then gently close the jaffle maker. Cook for 3-5 minutes or until golden. Serve immediately

Why are toasted sandwiches called jaffles?

The term ‘jaffle’ refers to toasted sandwiches that are sealed around the edges. The name comes from how they’re made – using a hinged toaster called a jaffle iron. This simply presses the edges of the bread together resulting in a delicious pouch in the centre for the jaffle fillings.
