Salmon & Fennel Bruscetta Recipe

Introduction

Take toast to a whole new level with this Fennel & Salmon Bruscetta. Salmon is a quick and easy fish to cook, making it perfect to pop on top of tasty Bruschetta. Heat the butter and 1 tbs oil in a small frying pan over medium heat. Add the shallot and garlic and cook, stirring, for 5 mins or until soft and golden. Transfer to a plate lined with paper towel and set aside to cool slightly

Combine cream cheese, shallot mixture, dill and lemon rind in a bowl. Season

Heat a chargrill on high. Cut the baguette on an angle into 2cm slices. Brush both sides of the baguette slices with the remaining oil. Cook the baguette slices on the grill for 2 mins each side or until lightly toasted. Transfer to a serving platter

Spread the baguette slices with cream cheese mixture and top with the salmon and fennel. To serve sprinkled with dill sprigs, lemon zest and drizzle with oil and lemon wedges
