Introduction
On our Hi-Fibre Lo-GI Loaf, this roast chook sandwich will fuel the whole family for work, school and plenty of adventures.

Lay out slices of Hi-Fibre Lo-GI Loaf, four by two

Using two forks, shred chicken meat from roast into small pieces and set aside

To assemble each sandwich, spread ½ tbsp sweet potato and cashew dip on one slice of bread

On top of the dip, place one slice of cheese

On the remaining slice, lay or spread your avocado out evenly to the edges

Arrange roughly ½ cup chicken meat on top of the avocado. Turn the slice with dip and cheese on top of the chicken and avocado. Repeat for all four sandwiches
