Mean Green Goodness Sandwich

Introduction

A salad between two slices of bread! This green goodness is picnic-ready and made for longer-lasting energy so you can keep going all day.

Ingredients

Method

Chop the chives finely

Place 1/4 avocado on one slice of bread, then layer with basil leaves, chopped chives, and some zucchini ribbons. You may need to halve the zucchini ribbons or fold over themselves to not overhang from the sandwich 

Add 2 slices of havarti, some sliced cucumber, alfalfa, olive oil and finish with salt and pepper to taste

Top with the other slice of bread and repeat
