Mac and Cheese with Crispy Breadcrumbs Recipe

Don’t let those last few bread slices go to waste! This homemade macaroni and cheese recipe is an easy (and tasty) way to make the most of your loaf.

Our mac and cheese recipe is everything you want from a comfort meal.
You’ll just love the delicious, cheesy sauce in this recipe, poured over tender macaroni that melts in your mouth. With bacon for extra flavour, and topped with breadcrumbs from your leftover loaf, it’s the ultimate cosy dinner winter warmer.

Mac & Cheese

375g pack of dried macaroni
50g unsalted butter
50g plain flour
3½ cups of milk
1 cup of tasty cheese, grated
1 cup of Gruyere cheese, grated
4 slices of streaky bacon, diced into 1 cm pieces and fried until crispy
4 spring onions finely sliced
1 tbsp salt flakes
Cracked black pepper

Breadcrumb topping

2 thick slices of stale bread, made into breadcrumbs
4 tbsp butter, melted

Method

    1. Step 1

      Pre-heat oven to 200°C

    2. Step 2

      Cook pasta using packet instructions

    3. Step 3

      In a large pot over medium heat, melt butter and add flour. Stir continuously with a wooden spoon until mixture comes together. Cook for a further minute, still stirring

    4. Step 4

      Add the milk – ½ cup at a time, stirring quickly. The mixture will form into a paste again and when this happens, add more milk. Repeat until all the milk has been added

    5. Step 5

      Add the cheese to the sauce and stir until fully melted. Add the bacon, spring onion and pasta to the cheese sauce and stir until pasta is totally coated with the cheese sauce

    6. Step 6

      In a small bowl, mix together the breadcrumbs and melted butter 

    7. Step 7

      Pour into a baking dish and top with the breadcrumb mix. Bake for 10-15 minutes until the breadcrumbs are golden and crispy
