Everyone loves pasta, but if you’d like to amp up this humble favourite, try our Pangrattato Pasta recipe – you won’t regret it. Made on your choice of pasta, we’ve created a sauce that’s simple to prepare, but will wow you at the dinner table. Combining butter, garlic, lemon, and ricotta, the result is a creamy, tangy, and rich sauce that would be great on its own.

We didn’t want to stop there though! After all, it wouldn’t be a true lemon Pangrattato without the delicious texture of bread crumbs, made with our signature Bakers Delight Hi-Fibre Lo-Gi Block Loaf. Fried and flavoured with garlic, lemon, salt, pepper, and a hint of parsley for added freshness, it’s like nothing you’ve had before. 1 Bakers Delight Hi-Fibre Lo-GI Wholemeal Block Loaf or Hi-Fibre Lo-GI White Block Loaf
400g spaghetti or pasta of your choice
3 cloves garlic
2 lemons
50g butter
2 tablespoons ricotta
1 tbsp salt
1 tbsp pepper
1/4 cup finely chopped parsley
1 tbsp chilli flakes
1/2 cup grated parmesan

Method

    1. Step 1

      Cut off two thick slices from the Bakers Delight Hi-Fibre Lo-Gi Block Loaf and leave on the counter top over night to go hard and “stale” like. Cut the crusty bread into quarters and place in a food processor or blender until breadcrumbs form. To make your pangrattato, pour the breadcrumbs into a nonstick pan on a medium to high heat. Grate one clove of garlic, half a lemon zest, pepper, salt and half the parsley into the breadcrumbs and stir for approx 5 minutes or until breadcrumbs have browned. Remove pangrattato from the heat once finished.

    2. Step 2

      Cook your pasta to packet instructions. Reserve 1/4 cup of the pasta water

    3. Step 3

      In a pan on medium heat mix together, butter, finely chopped garlic, the juice from one lemon, lemon zest and 1 tbsp ricotta. Pour in the pasta with 1/4 a cup of pasta water and toss till combined

      Top the pasta with parsley, chilli flakes, salt, pepper, ricotta and the pangrattato. Enjoy!
