Ingredients
400g can butter beans
½ tbsp extra-virgin olive oil
½ brown onion, finely diced
1 garlic clove, diced
30g walnuts, chopped
1 tbsp chopped parsley
1 tbsp milk
200g lamb mince
Cracked pepper
1 large zucchini
Extra parsley to serve

Step 1
To prepare mash, drain butter beans and add to a pan over low heat. Once warm, add in milk and begin to mash gently. Season with cracked pepper

Step 2
To make meatballs, add mince, chopped parsley and walnuts, onion, garlic and cracked pepper into a bowl. With your hands, combine ingredients and roll them into 6 individual balls of equal size

Step 3
Heat oil in a large pan and cook meatballs for 6-8 minutes, rotating every few minutes to cook evenly. Place on a side plate to rest for 3-4 minutes

Step 4
Using the same pan and its remaining juices from the meatballs, add chopped zucchini and toss to coat. Add a dash of water to the pan to cook zucchini further and create a sauce consistency

Serve meatballs over bean mash and pour zucchini and pan juices over the top
