Healthy Shakshuka

With only a few ingredients, one pan and 30 minutes, you can enjoy cafe-style shakshuka at home. Loaded with flavour, you’ll be coming back time and time again with this easy shakshuka recipe. Don’t forget to add our Sourdough Vienna to soak up every last mouthful!

2 cups (340g) butterbeans, drained and pureed
2 tbs olive oil
1/2 tsp salt
1/2 tsp cracked pepper
4 eggs
1 Bakers Delight Sourdough Vienna
1/4 avocado, sliced
1/4 cup (50g) goats cheese, crumbled
Coriander, to garnish
Lemon wedge, to garnish

Method

    1. Step 1

      Pre-heat oven to 180°C

    2. Step 2

      Place white beans, olive oil, salt and pepper into a medium bowl and purée using a stick blender

    3. Step 3

      Transfer into a medium-sized frypan and using the back of a spoon create 4 shallow wells in the mixture. Crack eggs into each well, cover with foil, and place in the oven for 20-25 minutes or until eggs are baked through

    4. Step 4

      Five minutes prior to removing from the oven, place a skillet over high heat. Slice the Sourdough Vienna into four 2cm pieces and spray with olive oil. Grill bread for 2-3 minutes on each side or until charred

    5. Step 5

      Remove shakshuka from oven and garnish with sliced avocado, goats cheese, coriander and lemon wedges. Serve
