Garlic Bread Dumplings Recipe
These Garlic Bread Dumplings stuffed with spinach & ricotta are the comfort food we didn’t know we kneaded!

FEATURING Hi-Fibre Lo-GI White Block Loaf
Ingredients
16 slices Bakers Delight Hi-Fibre Lo-GI White Block Loaf
60g Baby Spinach
130g (1/2 cup) Ricotta
1/2 lemon, rind finely grated
125g butter, melted
2 tsp minced garlic
1 tbsp chopped fresh parsley

Step 1
Wash the spinach and place in a microwave-safe bowl. Cover with a plate and microwave on high for 1 minute or until wilted. Set aside until cool enough to handle. Squeeze with your hands to remove excess water and then chop

Step 2
Combine the spinach, ricotta and lemon rind. Stir until combined and season with salt & pepper

Use a 6cm round cutter to cut out a disc from each slice of Hi-Fibre Lo-GI White Block Loaf. Place a teaspoon of ricotta mixture in the centre of each disc. Place into a dumpling press to seal or simply fold over and use a fork to press edges down to seal

Step 4
Preheat the oven to 180°C. Line a baking tray with baking paper. Place the dumplings on the prepared tray and spray with oil. Bake for 20 minutes or until golden and crisp

Step 5
Combine the butter, garlic and parsley in a bowl. Spoon the garlic butter over each dumpling and transfer to a serving plate. Drizzle with any remaining butter mixture to serve
