Ingredients
4 Bakers Delight Croissants, halved
3tbs wholegrain mustard
125g ham, sliced*
150g Swiss cheese, sliced
8 eggs
1 cup (250ml) milk
1/2 cup chives, chopped
1/2 tsp salt
1/2 tsp pepper
1 1/2 cup (150g) shredded mozzarella, plus extra to top
Parsley, to garnish
Basil, to garnish

Step 1
Preheat oven to 180C

Step 2
Spread mustard in croissants and fill with ham and swiss cheese. Arrange in a 40cm x 25cm baking tray and set aside
*can substitute with smoked salmon if preferred

Step 3
In a large bowl whisk eggs, milk, chives, salt, pepper and mozzarella cheese together. Pour beaten eggs around croissants, top with shredded mozzarella place in oven and bake for 20 min or until croissants are golden and egg cooked through

Remove from oven and garnish with parsley and basil. Serve.
