1 Bakers Delight Croissant
200g light ricotta
1 tbsp olive oil
1/2 tsp salt
1/2 punnet blueberries
1 tbsp honey
1 tbsp icing sugar

Method

    1. Step 1

      Heat the croissant in the microwave for 10 seconds to soften slightly

    2. Step 2

      Place the croissant into the waffle maker for 2 minutes or until crispy

    3. Step 3

      Meanwhile, whip together the ricotta, olive oil and salt in a blender or food processor

    4. Step 4

      Place in a piping bag or snap lock bag and cut the corner

    5. Step 5

      Remove the croissant from the waffle maker and assemble with the ricotta, blueberries, drizzled honey and icing sugar!

What is a croffle?

The delightfully named ‘croffle’ (or ‘croissant waffle’) is a tasty mix of croissant and waffle. It’s made by sandwiching a croissant into a waffle iron, resulting in a crispy and delicious dessert that’s great with a variety of toppings. You can make it from scratch using raw croissant dough, or for a quick and delicious dessert you can use a freshly baked croissant.

How do you eat a croffle?

To eat a croffle, pop it on a plate straight out of the waffle iron. From there, add whatever you like! Our favourite toppings are fresh berries, ricotta, honey, icing sugar, maple syrup, custard, cinnamon sugar or whipped cream. Mix it up by adding different toppings to see which one you like best.

Who came up with croffles?

The Irish pastry chef and TV personality Louise Lennox is said to have invented the croffle in 2017, but there are references to it as early as 2015 in New York. By 2020, the croffle was making its way around social media as a new taste sensation. Safe to say that the croffle is now a dessert favourite around the world.
