Introduction

Our healthy take on fish & chips is the perfect midweek meal the whole family will love!

Ingredients

Method

Sweet Potato Chips

Cut sweet potato into 1cm wide chip pieces

Line an oven tray with baking paper, lay out chip pieces, drizzle with olive oil over and salt and pepper

Cook in pre-heated oven for 15-20 mins (while preparing fish) at 180°C

Fish

Crumb bread in food processor

Place in mixing bowl and stir through spices, salt and pepper

Cut fish into strips set aside

Whisk eggs in a bowl until combined

Add oil to a pan on medium heat. While the oil is heating, place each piece of fish in egg mix and then into the crumbs until covered

Once the oil is hot, add fish in batches and fry until golden and cooked all the way through

Serve with dill and parsley sprinkled on top and a squeeze of lemon and tartare sauce for dipping
