2 Bakers Delight White Hamburger Rolls
1 can of drained corn
1 egg
1/2 cup plain flour
1 tbsp paprika
1 tsp each salt & pepper
1 cup oil for frying
6 slices of halloumi
1 tbsp honey
1/2 tsp chilli flakes
1 avocado (mashed)
2 tbsp chives
1 cup rocket
2 tbsp chilli jam

Method

    1. Step 1

      Make your corn fritters by combining the drained corn, egg, flour, paprika, salt & pepper

    2. Step 2

      Pack into a fritter shape using your hands and fry in the oil, flipping on either side for approx 2 mins or until browned

    3. Step 3

      Cook your halloumi in a pan on medium heat, drizzle with the honey and top with the chilli flakes. Cook on each side for 2 minutes or until caramelised

    4. Step 4

      Assemble the burgers by cutting the White Hamburger Rolls down the middle and layering it with the avocado mash, spring onions, rocket, corn fritters, halloumi and chilli jam

Are fritters and croquettes the same?

Fritters and croquettes differ because fritters are made as a batter that’s fried. A croquette’s filling, on the other hand, is inside a breadcrumb crust. Fritters are also generally lighter than croquettes, which are more creamy and dense.

What can I use to bind fritters instead of egg?

If you don’t want to use eggs to bind fritters, or you simply don’t have any on hand, chickpea flour and water is a great substitute. You can also mix a tablespoon of flaxseed with two and a half tablespoons of water for an egg replacement.

Why are my fritters not crispy?

A reason that your fritter or corn patty isn’t crispy is because there’s too much water in the fritter batter. Make sure to properly drain your canned corn so that it’s nice and dry in the fritter mixture. It also helps to pat it dry with a paper towel or a teatowel to make sure all that moisture is gone.
