6-8 slices of Bakers Delight Hi-Fibre Lo-GI White Block Loaf

Schnitzels
2 chicken breasts
2 cups homemade breadcrumbs
1 cup flour
1 egg
Salt & pepper
1/3 cup cooking oil
2 baby gem lettuces
1 bottle Caesar dressing
1/4 cup shaved parmesan (extra for garnish)

Method

  1. Breadcrumbs

    1. Step 1

      To make fresh breadcrumbs, tear your leftover bread into chunks and pop them into a food processor with a metal blade

    2. Step 2

      It’s best to only fill the food processor half-way to give the bread room to move, so you may need to do a couple of batches if you want to make a large amount of breadcrumbs

    3. Step 3

      Then pulse until you reach your desired consistency

      If you prefer a crunchier texture for your breadcrumbs, you can dry your bread out first by placing it in the oven or a toaster before putting it in the food processor

  2. Schnitzels

    1. Step 1

      Flatten our your chicken fillets by placing between two layers of baking paper on a chopping board and using a meat mallet or rolling pin to flatten until roughly 1cm thick

    2. Step 2

      In a bowl, add the flour, salt & pepper. In a second bowl crack & whisk the egg and in a 3rd bowl add your homemade breadcrumbs

    3. Step 3

      Place your chicken into the flour and cover well, then repeat with the egg mixture & finish with a coating of breadcrumbs

    4. Step 4

      In a large pan on high heat, add vegetable or olive oil. Once oil is hot, shallow fry your chicken schnitzels for a few minutes on either side until golden brown

    5. Step 5

      Meanwhile, for the salad, roughly chop the lettuce then add to a large bowl. Add a generous amount of caesar dressing & the shaved parmesan & mix well

    6. Step 6

      Serve the schnitzels on a plate and then pile a large amount of salad on top of the schnitzel. Top with extra parmesan cheese & serve immediately
