French Toast
French toast without egg? You won’t miss them with this easy and delicious French toast recipe. It’s crispy on the outside, soft on the inside and makes the perfect breakfast or snack.
The best French toast recipes use top quality bread as a base for the toast and ours is no exception! Using our delicious Chia & Fruit Loaf, we also add vanilla and cinnamon to the mix, making this a tasty alternative to regular French toast. Choose your own adventure with your favourite milk, drizzle with maple syrup, Greek yogurt and blueberries and you’ve got a delicious breakfast or snack to rival the restaurants!
Substitute the Greek yoghurt for coconut yogurt and you’ve got vegan French toast.
Ingredients
6 slices of Bakers Delight Chia & Fruit Loaf
3 tbsp maple syrup
150g blueberries
2 tbsp chickpea flour
2 tbsp almond meal
2 tsp cinnamon
200ml oat milk or rice milk
1 tbsp golden caster sugar
1 tsp vanilla extract
1 dollop of Greek yoghurt
Grapeseed oil, for frying
Icing sugar, for dusting

Step 1
Gently heat the maple syrup and blueberries in a saucepan until the berries start to release their juices. Set them to one side in the pan

Whisk the chickpea flour, almond meal, cinnamon, milk and vanilla together in a bowl

Heat a little oil in a frying pan

Dip a slice of bread into the milk mixture, shake off any excess and fry the bread on both sides until it browns and crisps at the edges. Keep the slices warm in a low oven as you cook the rest

Serve with the blueberry mixture spooned over, a dollop of Greek yoghurt and dust with icing sugar
