Ingredients
8 Bakers Delight Hi-Fibre Lo-GI Round Rolls
1 white onion diced
3 cloves garlic, minced
1 cup cooked quinoa
3 small beetroots, grated
1 tbsp ground flaxseed
1 cup oats
1/4 cup fine breadcrumbs
1 tbsp balsamic vinegar
1 tsp cumin
1 tsp coriander
Vegan Aioli
1 container soft tofu
3 tbsp sriracha sauce
1 tbsp pure maple syrup
4 cloves garlic
1 tbsp fresh lemon juice
1 tbsp apple cider vinegar
1 tsp sea salt
Method

Step 1
Add the diced onion, garlic and grated beet to a pan and cook for 7-10 minutes until softened

Step 2
While they’re cooking, add the oats to a food processor and process into flour

Step 3
Add the rest of the burger ingredients to the food processor, including the cooked beet mixture and mix until well combined. It should be mostly smooth but still a bit textured. Shape the mixture into 8 patties

Step 4
Heat a non-stick pan over medium heat and add some non-stick cooking spray. Add the patties and cook for about 5-10 minutes per side. Ensure the pan is not too hot so you don’t burn them. You can keep flipping them till they are nice and crispy on both sides

Step 5
Smear some vegan aioli on your rolls, then add the patty and any other fillings you like. We used cucumber, red onion, rocket and avocado

Blend together 1 container soft tofu, 3 tbsp sriracha sauce, 1 tbsp pure maple syrup, 4 cloves garlic, 1 tbsp fresh lemon juice, 1 tbsp apple cider vinegar and 1 tsp sea salt
