Ingredients
1 ½ tbsp oyster sauce
1 tbsp reduced-salt soy sauce
½ large sweet potato
Handful snow peas
Broccolini bunch
Unsalted toasted cashews
400g beef strips
2 tbsp fresh ginger, diced
1 large garlic clove, diced
Handful of coriander, to serve

Step 1
Marinate beef strips in ½ the fresh ginger, oyster and soy sauce for 1hr or, overnight if possible

Step 2
In a very hot pan, fry the remaining ginger in oil then add beef strips and marinade mixture to the pan. Toss quickly for 2 minutes then remove from the pan to rest. Meat should not be cooked all the way through

Step 3
Add to the pan the sweet potato, beans and broccolini and coat in sauces left in the pan. Toss on high heat until vegetables are just softened

Add beef back to the pan and toss for an additional minute to finish cooking

Serve with toasted cashews
