Ingredients
1 Bakers Delight White Cob
A round of Brie
2 truss tomatoes, deseeded and diced
½ red onion, finely diced
½ bunch of basil, leaves picked plus extra to garnish
1/4 cup of olive oil
Balsamic glaze
Salt and cracked black pepper
Method

Step 1
Cut a hole in the top of the bread, just a little larger than the brie round

Step 2
Carefully hollow out enough bread to fit the brie into the bread

Step 3
Cut the very top off the brie to expose the cheese and place into the bread

Step 4
Place on a baking tray and bake for 15 – 20 mins or until cheese has fully melted

Step 5
While the cheese is baking mix together the diced tomatoes, onion and basil and dress with olive oil and salt and pepper

Once the brie is ready place on a serving plate and top with tomato mix

Drizzle over the balsamic glaze and top with more basil leaves
