This bread bake is high in fibre, featuring our own Hi-Fibre Lo-GI White Loaf, boosted with an extra hit of fibre thanks to the granny smith apples and chopped walnuts! It is perfect to serve straight from the oven with a generous scoop of vanilla ice-cream.

Ingredients
6 slices Bakers Delight Hi-Fibre Lo-GI White Block Loaf
3 eggs, whisked
½ cup low-fat milk
1 tsp vanilla extract
1 tbsp cinnamon
3 large granny smith apples, peeled & chopped
½ cup walnuts, roughly chopped
½ cup brown sugar
3 tbsp corn flour
Vanilla ice cream to serve, if desired

Step 1
Pre-heat oven to 180°C. Lightly grease & line a 20cm diameter cake tin. Slice the 6 slices of bread into 1cm cubes & set aside

Step 2
In a large bowl, combine the eggs, milk, vanilla & cinnamon. Stir to combine. Add the diced bread to the bowl & stir until the bread has absorbed the mixture. Pour the bread mixture into the bottom of the cake pan, pressing down lightly

Step 3
In a large bowl, combine the apples, walnuts, brown sugar & corn flour. Mix until the apples are well coated & spread evenly across the top of the bread mixture in the cake tin

Bake for 45 minutes or until the edges are brown. Allow to cool slightly before slicing into six pieces, serve with a generous scoop of ice-cream, if desired
