To make our delicious cheesecake recipe easy as pie, we’ve used our scrumptious Apple & Cinnamon Hot Cross Buns as a base, and created a filling that’s ready in a flash. What you end up with is a creamy and decadent dessert that will have your mouth watering. We’ve also added walnuts for a delicious crunch, and pineapple for a hint of tang.

Serve it up with whipped cream for a perfectly presented dessert that almost looks too good to eat!

8 Bakers Delight Apple & Cinnamon Hot Cross Buns, sliced into halves
2 cups (500g) Cream cheese
1 cup (250g) mascarpone cheese
1/2 cup (125ml) cream
1 tsp cinnamon
Pinch of nutmeg
Pinch of all spice
1 cup (160g) icing sugar
1/2 cup (55g) walnuts, chopped
1/4 cup (55g) crushed pineapple in juice
dried apple slices, to garnish
ribbon, to garnish

Method

    1. Step 1

      Place cream cheese, mascarpone, cream, cinnamon, nutmeg, all spice and icing sugar in the bowl of a stand mixer and beat for 30 seconds – 1 minute or until smooth

    2. Step 2

      Remove paddle and stir through chopped walnuts and crushed pineapple. Set aside

    3. Step 3

      Arrange Bakers Delight Apple & Cinnamon Hot Cross Buns bottom halves in the base of a 22cm cake tin

    4. Step 4

      Transfer cream cheese mixture into cake tin and smooth with a spatula. Arrange Bakers Delight Apple & Cinnamon Hot Cross Bun tops into tin and place into fridge to set for 3-4 hours

    5. Step 5

      To serve, remove cake from fridge and run knife along outside of cake tin and lift away from cake. Transfer onto a serving plate and decorate with apple slices and ribbon. Serve immediately

Why is my no-bake cheesecake not set?

If your no-bake cheesecake hasn’t set, you may need to put it back in the fridge to  help firm it up. As a general rule, leave your cheesecake in the fridge for at least 3-4 hours for it to set before serving. 

What is no-bake cheesecake filling made of?

A basic no-bake cheesecake filling recipe usually includes things like cream cheese, sugar, whipping cream, mascarpone, and sour cream. Gelatine can also be used to firm up the cheesecake, but isn’t necessary and will give a more moussy texture to the cheesecake.

Why is my no-bake cheesecake base soggy?

If you’ve made a cheesecake with a biscuit base, it’s a good idea to brush it with an egg wash before baking the base, so that the cheesecake mixture doesn’t seep in. Too much liquid in the cheesecake filling can also affect how much it seeps into the base, so make sure to use a thick mixture on top.
