Looking to take your burger nights up a notch? Our Baked Crispy Chicken Burger Recipe is full of crunch and flavour.

To make the chicken breast extra crispy and oh so tasty, we’ve used cornflakes and mixed spices to create the perfect crust. We’ve also added a honey and buffalo hot sauce combo to drizzle over the succulent baked chicken for that extra kick. It’s a sweet, sour and spicy mix that’ll make you wish every night was burger night! Add some Greek yoghurt and sriracha for creaminess and a bit of extra zing, some pickles to balance it out, and you’ve got chicken burgers that you won’t be able to put down.

And it wouldn’t be a crispy chicken burger without a tasty bun, so we’ve sandwiched it all inside our deliciously soft White Round Rolls.

Ingredients

Ingredients

2 Bakers Delight White Round Rolls
300g raw chicken breast
1 cup corn flakes
1 tsp; paprika, oregano, garlic powder, salt
1 egg (beaten with a fork)
2 tbsp honey
1 tbsp buffalo hot sauce (or sriracha)
1 tbsp olive oil
4 tbsp Greek yoghurt
1 tbsp sriracha
4 baby cos leaves
6-8 pickles (optional)
1/4 cup pickled red onions

Method

    1. Step 1

Preheat oven to 200 degrees celsius

    2. Step 2

Slice the chicken breast into two pieces and cut off the tail end (optional) to create a rounder shape. Bash with a rolling pin or mallet to flatten/even out. Set aside

    3. Step 3

Combine the cornflakes and spices in a food processor or bash in a snap lock bag to create a crumb-like consistency

    4. Step 4

Dip each chicken breast into the egg wash and then coat in the crumbs. Place on a wire rack in the oven for 12 minutes

    5. Step 5

Meanwhile make your hot honey by mixing the honey and buffalo hot sauce. Combine the Greek yoghurt and sriracha sauce and set aside

    6. Step 6

Once the chicken is cooked, evenly coat in the honey by drizzling on top or brushing

    7. Step 7

Cut the round rolls in half and place in the oven face up for 2-3 minutes or until crispy and brown

    8. Step 8

Assemble the burger with the base of the roll topped with the Greek yoghurt mix, baby cos, hot honey chicken, pickles, and pickled red onion. Add some more Greek yoghurt mix to the top bun and place on the burger. Enjoy!

Why are my chicken burgers dry?

The main reason that chicken burgers become dry is from overcooking, so make sure that when you bake the chicken breast you stick to 12 minutes in a 200 degrees celsius oven. It also helps with overall juiciness to add sauce to your burger, so for the perfect dinner make sure not to skimp on those mouth-watering toppings!

How to stack a chicken burger

When stacking a chicken burger, start with a generous helping of sauce on the bottom bun – this means it’ll soak in a little and you won’t lose it all on the plate. Then add the lettuce to catch all the juices from the chicken, finishing it off with pickles, some more sauce, and the top of the bun to hold it all together.

How do you know when chicken burgers are done?

The best way to know that your chicken burgers are done is with a meat thermometer, which should read 80 degrees celsius at the thickest part. If you don’t have one though, cut the chicken and if the juices run clear, it’s done. If they’re pink or red though, it needs a bit longer.
